From my cookbook…Frozen Blueberries with Hazelnut Cream
This dessert checks all the boxes: good, affordable, low-calorie! It’s genius!

Calvin Warren’s Frozen Blueberries and Hazelnut Cream Dessert
Calvin Warren is a work buddy from American Airlines. He has to be the happiest and friendliest guy I have ever known. Everyone likes Calvin and he is always smiling and cutting up. Besides these great qualities, if Calvin met someone one time, he never forgot their name. Or their family or just about anything about them they told him. It’s a trait I’ve always admired and wished I had.
Anyway, Calvin and his wife Becky moved to Florida when they retired, and we have been fortunate to be able to see them regularly as they live near some other friends we worked with who retired in Florida. We even stayed with them recently, they are just good folks. Becky likes to cook, and she whipped us up a charcuterie board that was so good and well-presented I just had to take a picture for myself! Calvin and I talk on occasion as well and I really enjoy his company and his friendship.
Recently I spoke to Calvin in the evening and as we were about to hang up, Calvin mentioned that he was getting ready to have his nightly dessert. Of course, you know me, I’m always interested in food and new things to eat. So, Calvin told me about it, and it just sounded so good I had to have some. And it’s good enough that I wanted to capture the simple recipe so I could share it with you too! This is a great recipe for guests as it comes together really quickly, and it is something out of the ordinary. Something special I would say. And if your guests are like me, they will go home and make it for themselves too!
Best of all, it will be a delicious snack with less than 100 calories! Enjoy!
Ingredients
1/3-1/2 cup frozen blueberries (Note 1)
Hazelnut coffee creamer (Note 2)
Directions
Place frozen blueberries in a small bowl such as a ramekin.
Pour chilled hazelnut creamer over blueberries until most of the blueberries are covered.
Allow to rest a few minutes. The blueberries will thaw a little bit and the creamer will freeze, creating a delicious taste and mouth feel sensation. Enjoy!
Notes
Blueberries can tend to be expensive but if you buy them in bulk at a store like Costco, they are reasonable. You just have to be OK with buying them in large quantities. Besides, blueberries are a “superfood” and quite healthy for you, and being frozen, they will never go to waste.
Ensure your creamer is refrigerated. Allowing the berries and creamer to rest a few minutes will cause the creamer to partially freeze which will give the dish a very nice mouth feel.
