From my cookbook…Dave’s Breakfast Burritos

Breakfast is my favorite meal of the day. Yours too? Go ahead and make these breakfast burritos for your family and be a hero. They will love you for it!

Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

 

David Giustozzi’s Breakfast Burritos

Now here is a breakfast you can serve a crowd with!  Great for family gatherings or weekends.  And as an added bonus, you typically have leftovers to serve the next day or two.  Feel free to double the recipe if you have a large crowd, just be aware you will need an extra-large skillet.  Or, as an option, you can cook each ingredient separately and then combine them in a large glass mixing bowl for serving.  There are no hard and fast rules, just make it how your family likes it!

Ingredients

  • 4 large eggs,

    mixed with a little half and half and whipped in a bowl

  • 2 large potatoes, red or yellow, preferred, diced to ¼”

  • 1 small onion, or ½ large, diced

  • ½ lb. breakfast sausage (Note 1)

  • 1 bell pepper, diced (Note 2)

  • 8 flour tortillas, taco size, warmed in a skillet

  • ½ lb. Mexican four blend grated cheese (Note 3)

  • Pure olive oil

  • Garlic salt and fresh ground black pepper to taste

  • Optional:  Sliced avocado

  • Optional:  Picante or hot sauce of your choice

  • Optional:  Diced tomatoes

  • Optional:  Thinly shredded iceberg lettuce

  • Optional:  Chopped cilantro

Directions

  1. In the largest skillet you have (Note 4), pour in a little olive oil and begin to heat the skillet to medium low.  Crumble the sausage and continue to break it up until you have little pellets, cooking until done.   Remove sausage from pan to a plate or large glass bowl and cover to keep warm. Don’t drain on a paper towel, allow the drippings to collect in the plate or bowl and leave remaining in the skillet

  2. If needed (and it probably will be) add additional olive oil or bacon drippings to skillet.  Add diced potatoes, cover and continue to cook, stirring occasionally until just tender and starting to brown.  Remove lid if potatoes release too much water.  Remove potatoes to plate with sausage and recover.  Add a little extra olive oil if needed to the skillet. (Note 6)

  3. Add onions and peppers to same skillet on medium low heat and cook until just tender and staring to brown.  You may need to add a little olive oil to ensure everything stays moist.  Remove to same bowl or plate and cover.

  4. Add the eggs to the skillet and scramble until barely set (Note 5).  Season with garlic salt and pepper.  Add remaining ingredients to skillet and mix well.  Remove skillet to the table or counter and let each diner serve themselves, adding optional ingredients as they wish.

  5. Enjoy this delicious breakfast with fresh fruit and hash browned potatoes, tater tots, black beans, charro beans, avocado or the side of your choice.  Remember, you make the rules!

Notes

  1. You can use more or less of the sausage if you desire.  What I like to do is cook up the other half as patties so I can place in a freezer to have another day for fried eggs on English muffin, sausage biscuits or I crumble for omelets.  You can use chorizo instead of breakfast sausage if you desire.

  2. I prefer jalapeno peppers on my burritos but recognize not everyone likes the heat.  If you chose to use jalapenos, seed and core 2 or 3 and substitute for the bell pepper.

  3. Use any cheese you and your family like.  Queso Fresco is a good choice, as is Monterey Jack.

  4. I have a very large carbon steel skillet I like to use.  It is large enough to hold all the ingredients and yet will allow the ingredients to crisp up by creating pan fond.

  5. Unless your skillet is well seasoned, the eggs may stick.  I prefer to cook them in a separate nonstick skillet and then add them back with the other ingredients to warm.

  6. If you are making Dave’s black beans, you can cook the onions and peppers together to save time.
