From my cookbook…Dave’s Fromage Fort Cheese Bread

Fromage fort is a special treat. You can serve it as an appetizer or with a meal. When you make this for someone, they will feel special!

David Giustozzi’s Fromage Fort Cheese Bread Appetizer

Everyone loves cheese and warm melted cheese as an appetizer is even better.  Typically, you would know this type of appetizer as fromage fort, and it is normally made from leftover scraps of cheese as a way to use the cheese and not throw it away.  Well, I can’t say I have the problem of having excess high-end cheese scraps sitting around but the idea is intriguing, none-the-less.

Normally, the fromage (cheese) is made into a spread that diners spread on themselves, called fromage fort. I’ve upped the game just a little here to make it easier on your diners.  Besides, who does not like ooey gooey garlic infused melted cheese toast?

If you want to ramp things up a little further, this can make a nice dinner for a warm evening.  Break out some salami, prosciutto, black and green olives, and some fresh veggies such as carrot sticks, celery, radishes and sliced red, yellow, or orange bell peppers and maybe some mixed nuts.  Just pour a nice glass of wine (the remainder of what you used for the recipe) and head out on the patio or porch and enjoy the evening.

As you can see from the picture, this cheese bread also makes a nice addition to a pasta dinner. Here’s my version for us more common folks.

Ingredients

  • French Baguette or Italian bread, sliced on the bias ½” thick

  • ½ lb. Munster cheese, grated (Note 1)

  • 1 clove garlic, minced

  • ¼ cup dry white wine

  • Salt and freshly grated black pepper to taste

  • 1 ½ tablespoons butter, softened (optional)

Directions

  1. Mix the grated cheese with the minced garlic and wine.  Stir well to combine.  You probably don’t need any salt, but a few grinds of pepper is nice.  Place in the refrigerator for an hour or so to allow all the flavors to meld (marry).

  2. Remove the cheese from the refrigerator about an hour before you plan to use it to allow it to come to room temperature.  This makes it easier to spread.

  3. Use a spoon or knife to spread a layer on each piece of bread.  Place on a cookie sheet.

  4. Turn oven to broil (use low broil if you have that option).  Place the cookie sheet about 3” from the broiler and broil until the cheese is melted and just starting to brown.  Watch it closely!  It goes from not done yet to ruined in just a few seconds.

  5. Serve immediately while still warm.  Watch the smiles on everyone’s faces as they bite into this, and the stringy cheese leaves a trail from their mouth to their hand.  Wonderful!

Notes

  1. Buy a ½ lb. block of Munster from the deli.  Freeze it for a little while to aid in shredding it.  Munster is very soft and does not shred easily at normal refrigerator temperatures and it’s worse as it comes to room temperature.  Here is an option that I like.  Use different soft cheeses mixed together such as mozzarella, or other soft cheese you may have around.

  2. If you want this to be kid friendly, omit the garlic and the wine.
