Not Quite From My Cookbook…Dave’s Peanut Butter Ramen Noodles
Even though I published my cookbook in 2025, I’m still developing new recipes every week. And sometimes, I want to share them with you! This is one of those times!
There are over 300 recipes in my recently published cookbook, Everyday Cooking for Everyday People Like Us (Click on the link in Note 1 to get your own copy). Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!
Introduction
If you want a delicious, quick, and easy “tastes like Pad Thai”, this is it. Oh, and did I say cheap? Yeah, that too. It’s not in my cookbook because that was published last year, but I do want you to have this amazingly simple lunch recipe that comes together in a few minutes. I even give you options to make the peanut butter sauce in advance, so you can reduce the time to make it even more! What’s not to like?
David Giustozzi’s Peanut Butter Ramen Noodles
If you like Pad Thai, you’ll love this quick home noodle dish that is ready in less than 10 minutes. It’s very inexpensive and filling from the peanut butter, and it’s a lunch that will carry you through the afternoon. Or a quick and simple weeknight dinner.
If you want, you could enhance it with some leftover rotisserie chicken or even fried tofu, but I enjoy it just like it is. Also, if you want to make enough sauce for a few days, go ahead and double or triple the recipe, then save it until you need it. Just microwave it to heat up. If you are like me, you already have all the ingredients in your pantry.
Ingredients
1 2.5 to 3.0 oz. package or cup of instant ramen noodles,
flavor packet reserved for another use
1 to 1 ½ Tablespoons peanut butter (Note 1, 2)
11/2 teaspoons sesame or hot sesame oil (Note 3)
1 tablespoon honey
1 tablespoon soy sauce
Scant 1 tablespoon rice vinegar
½ teaspoon garlic powder
1/4 teaspoon ground ginger
Dry-roasted or roasted peanuts (optional)
Sliced Green onions for garnish (optional)
A sprinkle of sesame seeds for garnish (optional)
Leftover rotisserie chicken (optional, Note 4)
Directions
Prepare noodles according to package directions.
While noodles are resting, add all remaining ingredients except onion, sesame seeds, peanuts, and chicken (if using) in an oversized bowl (I use a pho bowl, or you can use a glass mixing bowl). A larger bowl is easier to mix in and reduces the chance of making a mess.
Microwave for about 15 seconds to warm all ingredients so they mix well. Using a whisk, stir until well incorporated.
Drain all water from noodles and add to bowl with sauce. Toss well to incorporate and coat the noodles.
Serve, passing green onions, sesame seeds, and chicken to garnish

Notes
You can use creamy or crunchy peanut butter. I like the crunch of the peanuts, but you can also supplement with additional peanuts when you prepare it. If you use crunchy peanut butter, use a little more to account for the peanuts as you will have less of the peanut butter as a result.
Peanut butter has a lot of fat so use about the same amount you would on a peanut butter and jelly sandwich.
Hot sesame oil is very hot so be sure you can take it. Mix it half and half with regular sesame oil if you want some spice but not too much.
If you use added chicken or peanuts, don’t use too much as the meal may be too heavy.
