From my cookbook… Dave’s Sausage Bowl

How often do you wonder, after a long day at work, what can I cook for dinner that is quick, easy, and satisfying, and I have everything I need without having to stop at the store? Wonder no more, I have your answer!

There are over 300 recipes in my recently published cookbook, Everyday Cooking for Everyday People Like Us (Click on the link in Note 1 to get your own copy). Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

David Giustozzi’s Sausage Bowl

This is a great way to have a quick, simple, and filling dinner using leftovers or ingredients you probably already have in your pantry and refrigerator. I also use leftover steak, chicken (especially rotisserie), or pork. Use whatever you have, that’s the point!

Ingredients

·       1-2 tablespoons pure olive oil

·       1 leftover sausage link (any type, or whatever other meat you are using), cut into small pieces

·       1 medium yellow potato or two small ones, cut into ½’ pieces

·       1 small carrot, cut into ¼” coins, large pieces cut in half

·       ¼ cup (m/l) broccoli florets, cut into bite sized pieces

·       Garlic powder to taste

·       Salt, optional

·       Freshly ground black pepper, optional

·       Spicy Montreal Steak Seasoning, optional

·       Fresh or leftover spinach, optional

·       Grated cheddar cheese, optional

Directions

1.     Pour olive oil in an 8” skillet and turn to low while you cut the potatoes.  Add potatoes, cover and increase heat to medium.  Stir occasionally to prevent sticking and ensure even browning.  Lower heat if potatoes start to splatter.

2.     As potatoes start to soften, add carrots.  Cook for a few minutes until carrots start to soften, then add broccoli, stirring occasionally and keeping covered.

3.     Add the sausage to the skillet

4.     If using, add spinach and continue to cook until potatoes are starting to brown but vegetables are still crisp tender.  Sprinkle with garlic powder and steak seasoning.  If not using steak seasoning, sprinkle with salt and black pepper to taste.

5.     Place in bowl, sprinkle with cheese if using.  Enjoy!

Notes

1.     The potatoes can be peeled or unpeeled as desired.  Scrub well if you plan to use the skin.  The same goes for the carrot.

2.     You can add grated cheese to the top if you want to, but this dish is really good just as it is.

3.     Serves one, adjust quantity and increase the size of the skillet for more.
