From my cookbook…Gina Rhodes Brussels Sprouts
These aren’t your grandmother’s Brussels sprouts! You will absolutely love these!

My new toy…
I found a new toy recently. It’s not really a toy, but I’m having a lot of fun with it like it was a new toy. It’s actually an app (that’s an application) and it’s called Yuka. Yuka is a mobile tool for scanning food and cosmetic barcodes to receive health impact ratings. After downloading the app, you can use the camera feature to scan the bar code of food (or cosmetics, but I don’t do that), and it will give you a rating from 0 to 100. When the product comes up, it will display a scale ranking and a red, yellow or green color code. For foods that scored poorly, it will provide healthier options,
Well. My wife Diane has been using it recently, and I must say it is changing what she brings into the house! We recently used it on canned chickpeas. Wow! What a difference between brands! I just had to start scanning everything in the pantry and refrigerator I could get my hands on. Guess what? That’s right, I’m not too happy with what I’ve found.
Then I scanned the bag of organic Brussels sprouts I bought from Costco. Ah yes, something good for you (90/100)! Which made me think of this delicious recipe, of course. OK, don’t turn up your nose without trying them, they are amazing!
Gina Rhodes Brussels Sprouts
I was visiting my sister Gina and her family way back in 2015 and Gina said she was fixing Brussels sprouts as a side for dinner. Eeehhh, I thought to myself, Brussels sprouts? Ugh!
Well, let me tell you, here is a way to eat healthy and enjoy it at the same time. These are not your grandmother’s boiled Brussels sprouts! These are crisp, crunchy, and have a lot of taste with the goat cheese, pecans, and the sweetness of the Craisins. Try them today!
Ingredients
Extra virgin olive oil (Note 1)
4 cloves garlic, minced, more if you wish
2 lbs. Brussels sprouts, cleaned and halved (Note 2)
2/3 cup broken pecan pieces
4 oz. goat cheese, crumbled
½ cup Craisens (dried cranberries, Note 3)
Salt and freshly ground black pepper to taste
Directions
Barely coat the bottom of a large sauté pan with olive oil. Using medium low heat, add the garlic and sauté about a minute.
Add Brussels sprouts, cover and cook until softened but still firm, al dente, about 12 minutes.
When the sprouts are to the desired consistency, remove from heat. Add the goat cheese to the skillet and mix gently, add pecans and Craisens. Stir to incorporate.
Transfer to a serving bowl and serve, or just serve them buffet style from the pan. Enjoy!
Notes
I don’t normally like to cook with extra virgin olive oil as I don’t want to waste good olive oil, burn the oil or overpower the dish, but in this case, you are using just a little bit, not getting it too hot and it imparts additional flavor to the Brussels sprouts.
Brussels sprouts are sometimes hard to find; they can be expensive and the quality is often questionable. The best place I’ve found to buy them are at Costco.
If you want to plump your Craisens, place some warm water in the measuring cup with the Craisens as you prepare the sprouts. Pour the water out before adding to the skillet.
