Not Quite From My Cookbook… Dave’s Fried Eggs in Heavy Cream On An English Muffin

This is one of those recipes where, at first, you ask how can this even work? Then you prepare it, and it’s, Oh. My. Gosh! Check it out!

Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

 

I’ve been on a roll…

For the past several weeks, I’ve been focusing on recipes that put our Thanksgiving and Christmas leftovers to good use. The end game is delicious meals that are economical with our food and our time. This recipe is a great example of that.

Unfortunately, this recipe isn't in my cookbook because I developed it after it was published, but I want my readers to have it anyway. The key theme of this recipe is the economical use of our time and resources, a theme that runs throughout my cookbook.

I’ll follow this recipe with two more that did not make the cookbook. I’ve been focusing on using holiday leftovers in tasty ways, which has put me on a recipe-development kick recently.

David Giustozzi’s Fried Eggs in Heavy Cream on an English Muffin

If you purchased my cookbook, Everyday Cooking for Everyday People Like Us or have been following me for any length of time, you know that I try to always be efficient with our time, ingredients, and cost in the kitchen. We can prepare really good dishes that do not have to cost a lot of money. If you have a family, this is especially important. Frankly, spending our money wisely is a good practice at any time!

And so it is with this recipe. Christmas is over, and there are the usual leftovers, including ham from Christmas dinner and heavy cream from holiday baking.  Hmm, how can we best use these ingredients? Well, I’ve created a wonderfully delicious breakfast recipe for you, and given our holiday leftovers, it’s definitely good eats on the cheap!

Frying eggs in cream sounds a bit odd, and you probably are thinking it will result in a gooey mess, but that’s not the case at all. There is a lot of fat in heavy cream and what you end up with is perfectly fried eggs that are not greasy but delicious with a rich sauce as well. Then, placed on an English muffin with a leftover slice of ham and you have a great start to your day!

I’ll just say this is a very rich breakfast, especially with the cheese, and you don’t need anything to go with it except some fresh fruit. If you are not a heavy eater, consider spitting it with someone you love and it probably will turn out perfect!  Enjoy a wonderful breakfast that makes good use of your leftover holiday fixings and relish saving some money in the process!

Ingredients

  • 2 large eggs

  • Heavy cream, about ¼ cup

  • Salt and pepper to taste

  • 1 English muffin, fork split and toasted

  • 2 slices ham (Note 1)

  • 1 slice American Cheese, cut in half (Note 2)

Directions

  1. For the ham, you can heat it in a separate skillet, in the microwave or just allow to warm to room temperature.

  2. In a cold non-stick 8” frying pan, pour the heavy cream until the bottom is covered to a depth of about 1/8” or so. I err on a bit more than needed; you can discard it later if you wish.

  3. Crack the eggs into the cream. You will notice they will nest in the cream beautifully and be the perfect shape.

  4. Turn on the stove to a bit above medium heat. The cream will come to a gentle boil. Reduce heat to keep it boiling but not splattering.

  5. Continue cooking until the egg whites are mostly cooked but still slightly runny around the yolk, probably about 4 minutes, depending upon your stove. The yolk will appear not to be cooking, but it is on the bottom. Remove from heat, cover, and place on a cook portion of the stove and allow to rest for a few minutes.

  6. The result will be a very thick cream sauce, with most of the liquid boiled off. Depending upon how long you cook them and keep them covered, you can get a perfect “over-medium” finish without flipping them. I prefer the over-medium finish to sunny-side-up. If you flip the eggs, the yolks will likely firm up. The eggs may stick a bit, so use a silicone spatula to remove them.

  7. While the eggs are cooking, place the cheese on the toasted muffin, then the cheese, if using, then the ham.

  8. Place the eggs on top of the muffins, and spoon any remaining sauce over top. Cut bite sized pieces with a steak knife and enjoy!

Notes

  1. Here is a trick I use for leftover ham. After Christmas, I slice any leftover ham and place on a cookie sheet and place in the freezer. After it is frozen, I remove all the ham slices and place them in a zip-lock bag. No sticking!

  2. You can skip the cheese if you want a lighter meal.
