From My Cookbook… Dave’s Italian Style Broccoli

How about a simple and tasty way to eat healthy? Read on!

Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

Introduction

Mom always told us to eat our vegetables, and that often included steamed or boiled broccoli. Yuck! Here’s a better way that is quick, crispy, tasty and keeps all the nutrients. It will be your new go-to broccoli recipe!

David Giustozzi’s Italian Style Broccoli

I love simple dishes that help you eat healthy!  Broccoli is a super healthy food!  Viola!  A perfect combination of easy to make, healthy and delicious!

Once you make this dish, I think you will be like me and make it a go-to side dish!  The added benefit is that you fill the house with the aroma of garlic cooking in olive oil!  That’s a winner any day of the week!

Ingredients

  • Fresh Broccoli (Note 1)

  • Extra virgin olive oil (Note 2)

  • Garlic, peeled, smashed and minced (Note 3)

  • Garlic salt

  • Freshly ground black pepper

  • 2 teaspoons water

Directions

  1. Wash broccoli thoroughly.  Cut into small florets. (Note 4).

  2. Add some oil to a large skillet and heat to medium-low.  Sauté the garlic until tender, but not browned.  It will continue to cook after you add the broccoli.

  3. Add the broccoli.  Add about 2 teaspoons of water on top, being careful as it may splatter.  Mix well, cover.  Sauté for a few minutes, stir and check.  You want the broccoli to be crisp-tender, not raw or overdone. The broccoli will only take a few minutes, so don’t leave it unattended. The water should have boiled off.  The trick is not to get the skillet too hot, where you scorch the oil and burn the garlic.  You will know when you find the spot.

  4. Sprinkle garlic salt over top.  Serve and enjoy!

Notes:

  1. Select the quantity based on the number of people you are serving and the size of your skillet.  I always have leftovers, but broccoli tends to lose its crunch after you put it in the refrigerator.  Typically, I’ll just eat the leftovers cold (they will be a little crunchier that way) and not even heat them up again!  In the same vein, adjust your other ingredients to suit the quantity you are making.

  2. We typically use pure olive oil to cook as we don’t want the flavor of the oil to overpower the dish.  In the case of broccoli, the taste of the EVOO will complement it.  Also, we don’t cook the ingredients long enough to really ruin the EVOO’s flavor.  Use a little more than you might normally but not so much that everything is oily.  You’ll figure it out…

  3. Start with about 3 cloves of garlic for a pound of broccoli.  Smash each clove with the side of a chef’s knife, trim the end, and remove the skin.  Roughly chop.  We have a rule of thumb in our house that you can never have too much garlic.  While this is true if everyone is eating it, you might cause offense to others you are around the next morning…Just sayin’…

  4. You really don’t need to dry the broccoli very well.  The reason is that you want a little bit of water in your pan to create steam and help cook everything.
