From My Cookbook…Dave’s Monster Cookies

If you want a cookie that has just about everything in it, then this is the one for you! The kids will be happy to help make them.  And then, eat all the profits!

There are over 300 recipes in my recently published cookbook, Everyday Cooking for Everyday People Like Us (Click on the link in Note 1 to get your own copy). Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

Introduction

I think a cookie is just about the perfect all-around dessert. Now, don’t get me wrong. Pies are my favorite, and I absolutely love a moist, rich cake. In fact, there is probably not a dessert that I don’t like! But the thing about a cookie is that they are simple to store and eat. Just grab one after a meal, put one in your lunchbox, or have one for a quick late-night snack. What’s not to like?

And if you want a cookie that checks all the boxes of what you like in a cookie, then this is the one for you! As you can tell from the picture, the grandkids enjoyed helping make them. And, oh, of course, they enjoyed eating them too!

David Giustozzi’s Monster Cookies

I’ve evolved as a baker.  I started baking as I started desiring desserts more.  A long time ago, when Kristina was a young girl, she and I baked monster cookies. As we were making them, we started eating the raw dough, and it was good, so we just kept eating it.  As you can imagine, by the time we got the cookies in the oven, we were not feeling so good!  So, even if you are tempted to eat these raw, hold out for the real reward, and that’s when they are fully baked!

I really like this recipe as it does not use flour.  The obvious offset is that it uses more eggs than some similar recipes. These are really rich cookies, so keep that in mind.  I tend to make them smaller than other cookies as a result.

Ingredients

  • 1 cup sugar

  • 1 cup packed light brown sugar

  • 1/2 cup butter, room temperature (Note 1)

  • 3 large eggs

  • 1 1/2 cups chunky peanut butter (Note 2)

  • 1 Tablespoon vanilla extract

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 4 1/2 cups oats (Old Fashioned or Quick)

  • 1 cup M&Ms

  • 1 cup semi-sweet chocolate chips (Note 3)

  • 2 tablespoons milk (Note 4)

Instructions

  1. Pre-heat the oven to 350°F. Line two baking sheets with parchment paper.

  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together the sugar, brown sugar, and butter until light and fluffy.

  3. Beat in the eggs, one at a time, and then beat in the peanut butter, vanilla, baking soda, and salt until well combined.

  4. Add the oats and mix until combined, then add the mini M&Ms and mini-chocolate chips.

  5. Scoop 2-to 3-tablespoon mounds of dough onto the baking sheets, spacing the mounds about 2 inches apart.

  6. Bake for 12-15 minutes, then remove them from the oven and allow them to cool for 5 minutes on the baking sheets before transferring them to a rack to cool completely.

Notes

  1. You can use unsalted butter if salt is a concern for you.  Unless you bake a lot you may not have it handy.

  2. I prefer chunky peanut butter for the increased texture, but feel free to use smooth if you prefer.  Also, the peanut butter will thin the cookies out and make them spread more, so keep that in mind.  They are also really crunchy!

  3. Adding milk will help produce steam when the cookies are baking, causing them to rise more and form air pockets, producing a lighter cookie. and enhancing the Maillard reaction (acids reacting with sugars, giving the browning effect) and adding a little more roasted or toasty flavor to the cookie.  The milk fat will also add extra tenderness and a richer flavor.  Best to use whole milk if you have it.

  4. If you want to, use ½ cup of white chocolate chips and reduce the semi-sweet chocolate chips to ½ cup.

  5. The cookies will continue to cook after you remove them from the oven.  If you prefer them chewier, remove them a little early and allow them to cool on the baking sheet.  If you like them crunchier, leave them just a little bit longer in the oven and place them on wire racks to cool
