From My Cookbook… Diane’s Skillet Fried Toad-In-The-Hole

Now, mind you, this is not a proper British Toad-In-The-Hole. Rather, an Americanized version, often called Egg-In-A -Hole. Regardless, it’s fun to make and fun to eat. Bully!

Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

I have no idea where or when Diane started making this breakfast dish. But, you must admit, it’s kinda unique, kinda fun, always gets interesting comments, and just downright good to eat. That’s all I needed to know to make it and get it into my cookbook. Now it’s your turn!

Diane Giustozzi’s Skillet Fried Toad-In-The Hole

I have a few recipes that, when you look at them, you say, “Why would I even need a recipe for that? It’s so simple?”  Well, one of the reasons I wanted to include it is because I know that simple recipes sometimes get forgotten, and I want you to see this one and say, “Oh, yeah, I forgot about that one, and it’s so simple to make!”

So, without further ado, here it is, simple and satisfying. You can use butter instead of bacon grease, but I like the flavor and the smell it gives the house better.  Bacon grease is something we always save and have around anyway.  If you decide to cook some up that day, then you already have what you need!

For an interesting take on this dish, you can use leftover polenta in place of the toast. Typically, polenta is spread in a sheet pan so that the leftovers can be cut and fried.  If you choose to do this, use a glass or round cookie cutter to cut out the center, then cook using the same directions as for the bread.

Ingredients

  • 1 egg, large or extra large

  • 1 piece of toast,

center cut out about 2 inches and reserved

  • Bacon grease or butter (Note 1)

  • Garlic salt to taste

  • Freshly ground black pepper, to taste (Note 2)

  • Hot sauce (Note 2)

Directions

  1. In a nonstick skillet (Note 3), heat on medium and add bacon grease.  When warm, spread around with a silicon spatula (Note 4).

  2. Add bread to the skillet.  Add the cutout next to the slice to cook, or “toast” in the pan as well

  3. Crack an egg in the hole in the toast, being careful not to break the yoke.  Sprinkle with garlic salt and pepper, if using.  Cover with a lid to better cook the top of the egg.

  4. Cook until the whites are set and the yoke starting to firm up on the bottom.

  5. Flip and continue to cook until desired doneness.  Flip bread cutout.  I like my eggs over medium, somewhat runny so that I can wipe the runny yoke with the now toasted bread cutout.

  6. Serve with bacon or sausage and fresh fruit.

Notes

  1. If you use butter instead of bacon grease, spread it on both sides before cutting out the hole.  The nice thing about butter is that you can spread it evenly and get a really even brown on the bread, including the center.  Cut the hole after buttering if you do it this way.

  2. Diane does not use pepper or hot sauce on hers, but I like them on mine, so they are included as optional.

  3. I like using a well-seasoned carbon steel skillet, which, due to its seasoning, is nonstick.  A well-seasoned cast-iron skillet is a good choice, too.  If you don’t have either of those, feel free to use a regular nonstick skillet of your choice.

  4. I have a little silicon spatula that I just love.  It’s small and flexible enough to handle most tasks and will conform to the edge of the pan should you have some food that starts to climb up the sides. It’s a little small for a large slice of bread, and not quite tough enough for foods that tend to stick, but for eggs and other recipes like this, I think it’s wonderful.

  5. You can double this for a more substantial breakfast.
