From My Cookbook…Jewel’s Blueberry, Strawberry or Cherry Delight
This is a simple, light, and refreshing dessert made with all the bounties of summer. Make this delicious dessert for your family today, and they will thank you. And of course, it’s Mom-tested and approved!

I developed my cookbook to preserve family recipes and the stories that go with them. My mom, Jewel, always made good food and delicious desserts for our family. This one is a light and simple recipe that the whole family will enjoy
Jewel Giustozzi’s Blueberry, Strawberry or Cherry Delight
My mom used to make this dessert for us on occasion when I was a child. It was so good! And as you can see, there are variations to ensure everyone finds something they like! I seem to remember we had the blueberry or cherry most often. We had fresh strawberries from the garden every year but enjoyed them fresh and I’m pretty sure that’s why Mom didn’t often use strawberries in this recipe. When she did bake with them, she made strawberry pie! Well, it was not really baking, the stawberries were fresh and the dessert was no bake. What is interesting is that in her original recipe, she called this desser a cake roll. I’ve changed the name to Delight, which better reflects what it is. Funny!
Simple and satisfying, I’ll call that a win any day!
Ingredients
1 cup all-purpose flour
¼ cup brown sugar
1 stick (8 tablespoons) butter, softened at room temperature
1 cup chopped pecans
1 envelope Dream Whip (Note 1)
1 8 oz. package cream cheese, softened to room temperature
¾ cup sugar
1 teaspoon vanilla
1 21 oz. can blueberry, strawberry or cherry pie filling, chilled (Note 2)
Directions
Prepare the crust
Preheat oven to 350 degrees.
Mix flour, brown sugar, butter and pecans. Using shortening or spray (such as Pam), grease a 13 x 9 glass or ceramic baking dish. Press mixture into bottom of the dish.
Bake for 10 minutes or until light brown.
Remove from oven, allow to cool on the counter and place in refrigerator until cold.
Prepare the mix
Mix Dream Whip according to package directions. Mix Dream Whip, cream cheese, sugar and vanilla well. Place into a baking sheet on top of the crust. Top with pie filling. Return to refrigerator until ready to serve. Enjoy!
Notes
Dream Whip is not something that seems common or used much today, but it is still available, and there is a certain nostalgia, and probably better taste, to it. If you want, you can substitute 2 cups of Cool Whip or other prepared topping.
I’m guessing the size of the “can” in the canned pie filling has shrunk since she used to make this recipe, but I think the 21 oz. can will be adequate.
