From My Cookbook…Jewel’s Ground Beef Stroganoff
You probably have not seen or eaten this delicious dish in a long time, and that would be too bad because it’s a true comfort food.

Introduction
I had to resurrect this recipe because I hadn't had it in a long time. You may have, possibly, eaten it in your school cafeteria growing up, and that likely would have been a long time ago. Make it for your family this week. They will enjoy it and thank you as well!
Jewel Giustozzi’s Ground Beef Stroganoff
I liked everything my mom cooked when I was growing up. Except that one time she made liver and onions. No one liked that so she never made it again. Then one time when my mom was out of town visiting her mother in Alabama, my dad made tripe. I did not like that either. So, except for innards, I pretty much like anything.
Now that we have out of the way what I don’t like, let’s talk about the things I do like. Tacos, pizza, pretty much any ethnic food, soups, stews and other one dish meals. Then there are the ground beef dishes such as sloppy joes, shepherd’s pie and beef stroganoff. Yes, I know, I know many recipes use skirt, sirloin, or other whole and better cuts than ground beef. While I like many “higher end” foods, I really do enjoy simple foods like ground beef stroganoff. While I don’t always like to add canned soups, the cream of mushroom just makes this.
Your family will enjoy this simple and satisfying dish as much as I did growing up. Given this recipe is 60 years old, I’ve made a few modifications to update it a little bit. Enjoy!
Ingredients
1 tablespoon pure olive oil.
1 lb. ground chuck, 80/20 (Note 1)
1 small onion, chopped
2 cloves garlic, minced
1 10.5 oz. cans of condensed
cream of mushroom soup (Note 2)
1 cup sour cream
1 beef bouillon cube in ½ cup water (Note 3)
¼ teaspoon ground thyme
¼ teaspoon dried basil
· 1-2 tablespoons flour (if needed to thicken)
1 16 oz package cooked egg noodles with
3 tablespoons butter, parsley (Note 4)
Salt and freshly ground black pepper to taste
1-2 tablespoons Worcestershire sauce (optional)
Directions
In a stockpot or Dutch Oven over medium low heat, brown the meat with the onions. Cook until just barely brown, do not overcook on high heat or the meat will be tough. Drain grease, leave just a bit in the stockpot. Add the garlic and cook for 2 minutes.
Add ¼ cup of the beef bouillon, stir. Add the mushroom soup and stir to incorporate. Add the thyme and basil. Allow to cook until incorporated and warm throughout. Add the sour cream and heat until warm. Taste and adjust seasonings. If you want a little more flavor, add the Worcestershire sauce, stir well to incorporate, taste again.
Meanwhile, prepare the egg noodles according to package directions, saving some of the pasta water. Add 3 teaspoons of butter, stir and keep warm. If the noodles start to dry out, add a little pasta water.
To serve add egg noodles to a bowl and spoon beef mixture over. Great with a garden salad on the side.
Notes
I like ground chuck better than leaner cuts of meat. You will have to drain off the fat that you would not with the leaner cuts, but I think you get more flavor.
Some recipes will call for added mushrooms. I don’t think you need them but use them if you wish.
Or use Better Than Bouillon. I like it better anyway. It’s a little salty so consider that.
I like Amish egg noodles if you can find them. Add butter and sprinkle with chopped fresh parsley. Egg noodles are a better choice than pasta due to the higher egg content and richer taste.
