From my cookbook…Wold Family Lasagna
A generational family favorite lasagna recipe from our good friends.

Lasagna for the win!
Who does not like lasagna? If you were to thumb through my recipe collection, you would see 31 different versions of lasagna. Not all of those are mine, of course, but several of them are. And you know what? Only two of them made it into my cookbook, and this is one of them! Ooey gooey cheesy goodness! This is a family favorite that has been passed down for at least three generations. Yeah, make it today - it’s that good!

Wold Family Lasagna
After Diane left American Airlines, she worked at WPX Energy in Tulsa for 10 years until their merger with Devon Energy and the subsequent move to Oklahoma City, at which time she retired for good. From two companies! Way to go!!!
Diane and I both really enjoyed working for American and most of our friends are former AA’ers as well. Diane had two bosses at WPX and they were great! Not only that, but there were a bunch of great folks that she worked with there as well and we remain friends. What a blessing to be able to work at companies you love with wonderful people with whom you can be friends!
Anyway, her boss Brian had all his direct reports and their spouse/guest over for dinner at his home one time and his wife, Darci, made a simple but delicious lasagna that everyone enjoyed. We liked it so much that we asked for the recipe!
It’s now part of our recipe rotation. It’s simple and quick and your entire family will love it!
Ingredients
For meat mixture
1 lb. ground beef
1 clove garlic (use more if you like)
½ cup chopped onion (optional, but recommended)
1 tablespoon dried parsley (Note 1)
1 tablespoon dried basil
1 teaspoon dried oregano
1 ½ teaspoon salt
1 16 oz. can whole tomatoes
2 6 oz. cans tomato paste
For cheese mixture
3 cups ricotta cheese (Note 2)
2 large eggs, beaten well
1 teaspoon salt
½ teaspoon pepper
2 tablespoons dried parsley
½ cup grated parmesan cheese
Other
1 lb. fresh mozzarella, sliced
1 10oz. package precooked lasagna noodles
Cooking spray or pure olive oil, for baking dish
Directions
On low heat, break up ground beef, heating gently. Add garlic, stir well. Add all other ingredients, breaking up the tomatoes. Simmer for 45 minutes.
Preheat oven to 375 degrees.
Combine all the cheese ingredients. Spray or oil a 13x9 and place a layer of noodles on the bottom. Place half of the cheese mixture, followed by half of the mozzarella and half of the meat mixture. Repeat.
Bake for 30 minutes
Notes:
You can use fresh herbs; you will just have to convert the quantities. A good rule of thumb is 3x more fresh than dried.
OK, so the original recipe calls for EITHER ricotta OR cottage cheese. Personally, I NEVER use cottage cheese in lasagna. On the other hand, I recognize some people like it. Your call, my friend…That’s all for today!
