From My Cookbook… Dave's Southern Peach Cobbler

I can think of few things that say summer in the South better than peach cobbler. Here’s a delicious recipe for a crowd. Or, if you really want to be a friend, make one for a neighbor or extended family from wonderful summer peaches!

Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!

Introduction

I’ve spent most of my life living where fresh, local summer peaches were plentiful. In South Carolina, they were everywhere, and here in Oklahoma, everyone eats Porter, OK, peaches as much as they can when they are in season. An early summer peach is just such a treat! Typically, they are bought by the bushel so we can freeze some for the whole year.

If it’s out of season, you could use frozen peaches and still get good results. Although my recipe does not state this, I’ve done it before.  Whatever! Just go make (one or two) of this delicious recipe for you and someone you love!

David Giustozzi’s Southern Peach Cobbler

Tony was in the Boy Scouts and in a very active troop.  They would go camping at least once a month, all year long.  Winters are not often very cold in Northeastern OK, but the summers can be quite hot.  Anyway, not much stopped them.  The dads were free to come along, and then every September we had a family campout at one of the nearby lakes, where all the families would come.  I would bring my boat; others had boats, jet skis, etc.  Everyone always had a good time.

Generally, the boys, along with one or more of the scout leaders, would do the cooking.  I won’t get into the time the boys had to cook pancakes with only a scout knife, but you can imagine how hungry many of us were that day.  What they did do very well was peach cobbler.  They would make up several batches in cast-iron Dutch ovens.  They would stack hot coals on top of each other, then stack the Dutch ovens (which had short legs) on top of each other near the fire.

Besides the memories this made, it made for some really good desserts after a long day of hiking, skiing, or other physical activity.  This version does not use a cast-iron Dutch oven but has been modified for the kitchen.  Enjoy!

Ingredients

For the peach mixture

  • 9-10 fresh peaches, skinned, pitted and sliced (Note 1)

  • ¼ white sugar

  • ¼ cup brown sugar

  • ¼ teaspoon ground cinnamon

  • 1/8 teaspoon nutmeg

  • 1 teaspoon fresh lemon juice

  • 1 teaspoon vanilla extract

  • 2 teaspoons corn starch

For the dough mixture

  • 1 cup all-purpose flour

  • ¼ cup white sugar

  • ¼ cup brown sugar

  • 1 teaspoon baking powder

  • 6 tablespoons butter, chilled and cut into small pieces

  • ¼ cup boiling water

For the topping

  • 3 tablespoons white sugar

  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 425 degrees.  In a large glass bowl, combine peaches and all ingredients from the peach mixture. Toss to coat evenly.  Pour mixture into a 10x15 glass baking dish.  Bake 10 minutes.

  2. While the peach mixture is baking, combine all the dough mixture ingredients and combine with your hands, squeezing the butter until the mixture resembles coarse cornmeal.  Stir in water until just combined, and it starts to form a ball

  3. Remove the peaches from the oven and pinch pieces of the dough mixture, dropping them on top, leaving clumps.  Sprinkle with topping mixture.  Bake until topping is golden, 15-18 minutes. 

Notes

  1. To easily peel peaches, place in a large pot of boiling water for 30 seconds.  Remove peaches with a spider, placing immediately into pot of ice water to stop cooking.  Peel.
