From my cookbook…Delicious Meals from Easter Leftovers
Easter is fast approaching, and when the holiday gathering is over, you’ll want delicious ways to use your holiday leftovers. Never fear, I’m here to help you!
There are over 300 recipes in my recently published cookbook, Everyday Cooking for Everyday People Like Us (Click on the link in Note 1 to get your own copy). Even in these inflationary times, we can prepare delicious meals for our family and do so in a way that does not break the budget. And it’s all in the cookbook!
Introduction
A major theme from my cookbook, Everyday Cooking for Everyday People Like Us (Note 1), is to be efficient in the kitchen. Being efficient in the kitchen means making the best use of our time, ingredients, and reducing waste. Making good use of leftovers saves both time and money. Today, I’m going to share links to some of my previously published recipes that make wonderful meals with leftovers from your holiday gathering.
There are traditional ingredients often associated with specific holidays, but more and more, people are trying new things and expanding their traditional food repertoire. For example, last Christmas, in addition to serving traditional ham, we also provided sushi ingredients for the crowd. Yes, everyone, kids included, learned how to make sushi rolls, and everyone had an opportunity to learn something fun and interesting, and also try new foods. So, with that said, I’ll provide links to any past holiday leftover meals that I’ve published in the past year or so. There are more in the cookbook!

Oh by the way…The attached picture reminds me of when I smoked a spiral-cut ham last Thanksgiving. Yes, we had a smoked turkey and a smoked ham. If you’ve never smoked a ham, you can’t believe how easy and tasty it is!
And…You don’t need a smoker. Here’s how I did it, and I’m telling you the results are amazing. I bought a smoke generator from Amazon (Note 3). I then cold-smoked the ham on the rack of my gas grill with the lid closed (cold smoking is smoking the meat without heat) for about an hour and then warmed it in the oven (it’s precooked) according to the package directions. You’re gonna love it!
That’s all for now!
