From My Cookbook…Dave’s Sauteed Green Cabbage
There’s just something about sautéing green cabbage with bacon grease that makes it a wonderful comfort food and side dish. It’s a perfect fall food!

Introduction
Making sauteed green cabbage is so simple, you would not think you need a recipe for it. I give you a couple of pointers to make sure it turns out like the tasty comfort food that it is. And, if you want to make a meal of it, cook up some Italian Sausage links and add them at the end. If you really wanted to make it a meal, cook up some skillet-fried potatoes and onions. Combine everything at the end, and you can feed a crowd or have leftovers for the week! Delicious!
David Giustozzi’s Sauteed Green Cabbage
This is another recipe that seems so simple you don’t need to write it down, like David Giustozzi’s grilled asparagus and broccoli. But here it is, so you will have it for a quick reference, and you feel like a veggie that is tasty, reasonably healthy, and simple to make. You can also use this as an option to boiled cabbage for corned beef and cabbage for a crispier option.
This sauteed cabbage goes with most dishes, especially pork. Be sure not to overcook it, you want it crisp tender. Adding a splash of water helps speed up the process.
Ingredients
½ head green cabbage, cleaned, cored,
quartered and cut into strips.
2 tablespoons bacon grease (see note 3)
Garlic salt
Freshly ground black pepper

Directions
Place the bacon grease in a large electric skillet on low and melt. You can use a very large skillet on the stove, but it needs to have enough surface area so the cabbage does not pile up and you will need a large enough lid to cover it.
When the bacon grease has turned to liquid, add the cabbage and increase the heat to medium. Add a splash of water. The water will boil and steam, allowing the cabbage to cook quicker and not burn. Cover. After a few moments, stir. As the water begins to release from the cabbage, cock the lid so some steam can escape. The key is to cook the cabbage crisp-tender, not so long that it becomes mushy.
When done, turn the skillet off and sprinkle with garlic salt and freshly ground black pepper. Stir one last time and taste. Adjust seasonings if necessary and serve.
Notes
After the cabbage releases its water and starts to boil off, you may (but not always) need to add a little more bacon grease to keep it moist and flavorful.
You could add yellow onions if you would like; they add a nice flavor. Cut a medium onion into matchsticks and add them to the skillet at the same time as you add the cabbage.
You may need to add a little bit more bacon grease or, like I often do, a little pure olive oil if things dry out.
